The most amazing chicken with coriander. This is a very healthy food served with some great flavour lime. Very fresh and vibrant food to make everyones day as great as it can get.

  • 2-3 tbsp. olive oil
  • 6 chicken legs
  • 1/2 tbsp. salt
  • 1/2 tbsp. pepper
  • 1 onion
  • 2 tbsp. Garlic
  • 1/2 tbsp. cumin
  • 500 gr. water
  • 250 gr. basmati rice
  • 100 gr. red beans canned
  • 100 gr. corn, canned
  • 2 tbsp. juice
  • lime
  • 1/2 bunch of coriander


For serving: coriander, fresh, chopped, lime slices, pepper, freshly ground
Method: Heat a saucepan over medium to high heat for 2 minutes and add the olive oil. Season the chicken legs with salt and pepper, and add them to the pot with the skin side down. Saute for 5-6 minutes until they turn brown and then turn them on the other side for another 5-6 minutes. Finely chop the onion and garlic. Put the chopped onions in the pot, leave them for 2-3 minutes until soft, and then add the garlic and cumin. Stir for 30 seconds, add the water, and as soon as it boils, lower the heat and leave for about 10 minutes. Add the rice, beans, corn, close the lid and let all the ingredients cook together for another 15 minutes on low heat (or until the rice is soft).  


Once it is ready, add the lime juice and the chopped coriander to the pot. Serve with fresh coriander leaves, lime slices and freshly ground pepper.
